Satiating. Nutritious. And pretty tasty, if I do say so myself! This recipe is hands down the one I receive the most DMs for when I story it on IG. And these little no-bake energy bites are truly the best because they’re really easy to make and they can keep you going for the whole week. I like to make them on Sunday nights so they serve as a quick breakfast and/or an after-gym pick-me-up on my busy days.
I played with several different versions of the recipe before finally deciding this was my favorite. P.S. If you’re nursing these are especially good for you! If you try them be sure to shoot me a note on Instagram to let me know.
Ingredients:
2 c. quick oats
2 [pretty] ripe bananas
1 c. angel flake coconut
1/2 c. peanut butter (I do 1/4 crunchy, 1/4 creamy – psycho for the perfect texture, I know)
2 Tbsp ground flaxseed
1 tsp cinnamon
1 tsp vanilla
1 Tbsp sugar-free syrup
1/2 c. mini chocolate chips
Directionsns:
Combine all ingredients
Refrigerate for 1 hour
Using a mini scooper, scoop into mini balls and place into mini cupcake tin. Freeze for 30 more minutes.
Transfer all no-bake banana bites from the mini cupcake pan to a Tupperware container. Refrigerate. Consumer as needed. Easy right?! you’ll find yourself making them every week.
